Ingredients

    1/2 of a 12oz. paackage (1 cup) safeway Orzo
    1/8 cup Extra Virgin Olive oil
    2 cloves garlic, minced
    1 pinch dried red pepper flackes
    1 package 10 oz baby spinach
    2 tsp. Balsamic Vinegar
    1/4 cup chopped fresh basil leaves or 1 TB dried
    1/4 cup pine nuts, toasted
    1/4 cup shredded Parmesan cheese

Directions

Cook orzo as package directs. Heat olive oil in large skillet over medium head. Add garlic and pepper flakes and cook stirring for 1 minute. Add spinach and stir to mis in garlic. Reduce heat to low, cover and cook for 5 minutes until spinach is wilted. Stir in balsamic vinegar.
Drain pasta. Add to skillet with basil, pine nuts and Parmesan cheese. Toss well and season with salt and pepper. Serve with additional cheese if desired
