1 C diced celery
9 large hard boiled eggs, chopped
1 lb. boiled shrimp
1/2 C Hellmann's Light Mayonnaise
2 Tbsp. Light Sour Cream
1 Tbsp. Mustard
2 Tbsp. Lemon Juice
1/8 tsp. ground black pepper
Salt to taste
2 Tbsp. Shallots, minced
Boil eggs, let cool
Chop celery, shallots, eggs and shrimp, place in a large bowl.
In smaller bowl, add the rest of the ingredients except salt, and mix well.
Add mixture to the shrimp mixture and blend well. Season to taste with salt.
Refrigerate to blend flavors, preferrably overnight
