Thai Chicken Fried Rice

Ingredients

    1 1/4 cup rice
    500g chicken breast, diced
    4 shallots, chopped, white and green parts separate
    150g mixed frozen vegetables (e.g. corn, peas, carrots)
    1 tbsp canola oil
    1 clove garlic, crushed
    1 tbsp ginger, chopped finely
    2 tbsp chopped lemongrass
    1-2 tbsp coriander, chopped
    2 tbsp soy sauce
    1 tbsp fish sauce
    1 tsp sweet chili sauce


Directions

Cook rice in saucepan and cool (works best if rice is made day before). Heat oil in wok. Add garlic, ginger and lemongrass and stir fry for 1 minute until fragrant. Add chicken and white part of shallots and stir fry until chicken changes colour. Add vegetables and coriander and stir fry for 2-3 minutes. Add rice and sauces until heated through.

Serves 4.
