Brown Rice and Lentils

    3 c veggie stock
    3/4 c lentils
    1/2 c brown rice
    1/4 c diced onion
    1 can Rotel Mexican Tomatoes
    1/2 c 2% sharp cheddar cheese
    1 tsp Italian seasoning
    1 T garlic powder


Add all ingredients except cheese to a pot and bring to a boil. Cover and simmer until tender, about 45 minutes. Add cheese and stir until melted.
