Feta Pasta

Introduction

This recipe is one that my mom always made while I was growing up. It is still one of my absolute favorites today!!! It is full of flavor and it is perfect in the summer with all the fresh tomatoes! This recipe is one that my mom always made while I was growing up. It is still one of my absolute favorites today!!! It is full of flavor and it is perfect in the summer with all the fresh tomatoes!
Number of Servings: 12

Ingredients

    3/4 cup white wine
    1 TBSP minched garlic
    1 med. red onion
    1/4 cup sun dried tomatoes, packed in oil
    3+ tomatoes, peeled, seeded and diced
    1-2 bunches of swiss chard, roughly chopped
    1 can chicken stock
    1 block of feta cheese (about 5-7oz)
    1 cup parmesain cheese
    1lb pasta
    oregano, pepper and cayanne pepper to taste

Directions

In large skillet, saute garlic and onion in oil from sun dried tomatoes until soft. Add wine and 1-2 tsp oregano, pepper and cayenne pepper. Cook over medium heat until almost all liquid is evaporated.
Add 1/2 can chicken stock to onion mixture and add swiss chard. Cook until wilted, can cover
Add in cooked pasta and stir. Fold in tomatoes, sun dried tomatoes, parmesain cheese and feta cheese.


Serving size is about 1 cup
