Ingredients

Crust -
2 Cups Carbquick
1/2 Stick Butter, softened
1 tsp. Lemon Peel
1 Tbs. Lemon Juice
1/2 Cup Splenda
1/2 Cup Stevia
Topping -
1 Box Sugar-Free Lemon Flavored Gelatin
1 Tbs. Lemon Peel
1 Lemon's worth of juice
1 Cup Boiling Water
1 Cup Heavy Whipping Cream
1/2 Cup Splenda
1/2 Cup Stevia
Directions
Mix ingredients for crust and press into a 8x8 or 9x9 in pan, bake at 350 for 10-15 min.
Mix ingredients for topping starting with the gelatin, then lemon peel, lemon juice, water, cream, splenda and stevia. Mix together with an electric blender until well blended.
When crust is done, remove pan from oven and pour the topping in the pan. Set the pan in the fridge until the topping sets. Sprinkle with some splenda if you like and serve. Antwhere from 9-12 servings. It's pretty rich, so I recommend cutting it into 12 squares.
