2 onion; chopped
4 T stick margarine
4 T flour
4 C skim milk
4 C cheese
1 Lb pasta
Cook pasta according to the box
In a large deep skillet cook oinion (you want about a cup of onion, i used 2 onions since the ones I had are on the smaller side) in a little olive oil, just enough to coat pan
Melt the butter and add in the four making sure it does not clump up, this with help thicken the sauce
Slowly add in the milk, stirring as you pour until all the flour is desolved and the milk has thickened, about 5-10minutes
Add in the cheese (i used a part skim mozzarella and cheddar cheese blend) and stir until completely melted and take off heat.
Drain pasta and return back to pot. Pour cheese sauce over the pasta and stir until its all combined. Pout pasta into casserole dish and place in the oven for 20 minutes. Let cool for 10 minutes.
As a meal this makes 9 servings.
