Asian Baked Tofu

Ingredients

    1 container of firm or extra firm tofu
    2 TBSP reduced sodium soy sauce
    Sesame Ginger Vinaigrette dressing

Directions

Preheat oven to 400 degrees. Spray a cookie sheet or other pan with non stick cooking spray.

Press tofu and get out as much water as possible. Cut tofu into small cubes.

The first step is to try and get more of the water out of the tofu. Bake for 7 or 8 minutes. Take out of oven and mix around. Bake for another 5-6 minutes. Mix up again. When it seems like most of the water is out of the tofu and it's starting to firm up, add the soy sauce and dressing mixture and coat well. Bake for 10 minutes. Mix around and bake for another 6 or 7 minutes. Then turn off oven but leave tofu in the oven for awhile. This allows the tofu to firm up more.

(NOTE***It's better to prep the tofu before preparing the rest of the meal.)
