Pumpkin Protein Bars

Number of Servings: 16

Ingredients

    8 egg whites
    1/2 cup 1% cottage cheese
    2 cups oats
    1 cup canned pumpkin
    4 scoops vanilla protein powder
    1 tsp baking soda
    1/4 tsp salt
    2 tsp pumpkin pie spice
    1/2 cup splenda
    1/2 cup water

Directions

Mix all together and spread into 9 x 12 pan sprayed with Pam. Bake at 350 for about 20 minutes. Cut into 16 bars. If you want them crunchy, take the bars and slice them down the middle. Spray cookie sheet with cooking spray and place cut side down. Re bake at 375 until brown and crunchy.
