Easy Coconut Soup

Introduction

This is a modified-for-my-kitchen version of the recipe on the back of the Taste of Thai Green Curry Paste. Can eat as soup or serve over rice. I guess you can use soy sauce instead of fish sauce if you want this to be vegetarian, but if you're not, definitely try the fish sauce--it is SOOO yummy! Ingredients

    1 can light coconut milk
    2 Tbsp curry paste, red or green
    1-2 Tbsp fish sauce
    1 bag Quorn Chick'n Tenders
    1 bag frozen stir-fry mix

Directions

In a medium sacepan simmer coconut milk mixed with curry paste over medium heat for 5 minutes.
Add bags of Quorn and stir-fry mix and fish sauce and simmer 10 minutes.
Serve hot, garnished with fresh basil if you have it.

Makes 2-4 servings.
