Introduction

My mom's recipe for bean salad. The feta really adds something special! My mom's recipe for bean salad. The feta really adds something special!
Number of Servings: 14

Ingredients

    2 cans kidney beans, drained
    1 can white beans, drained
    1 can chickpeas, drained
    1/2 cup mayo (kraft with olive oil for this)
    3 tbsp cider vinegar, or to taste
    2 tbsp chopped sweet onion, or to taste
    2 stalks celery, diced
    1/2 cup crumbled feta cheese

Directions

Drain beans, rinse if desired to cut sodium, though it may turn out bland if you do. Mix all ingredients in a medium bowl, adding vinegar to your desired tanginess. Cover and chill at least 30 minutes before serving.
Maes about 14 servings, 0.5 cup each.
Makes a great topping for salad, especially with tuna or salmon!
