Lemon-Garlic Pasta

A simple linguine with a zesty lemon-garlic sauce. A simple linguine with a zesty lemon-garlic sauce.Number of Servings: 1
Ingredients
-
Whole wheat Linguine or Spaghetti
Juice of 1 lemon
Zest of 1 lemon
A tight handful of fresh cilantro finely chopped
1 T. Olive Oil
1/2 t. Crushed red pepper (optional)
1 anchovy in oil (optional)
1/2 c. Pasta Water (if needed)
Directions
-Cook linguine in salted, boiling water until al dente.
-While linguine is cooking, heat olive oil in large skillet.
-Add anchovy and garlic. Stir until anchovy is dissolved and garlic begins to smell. (For vegetarian dish, omit anchovy.)
-Remove pasta from boiling water while still al dente and put directly into the skillet. Retain pasta water.
-Stir lemon zest, lemon juice, and crushed red pepper into the pasta. Stir well.
-If pasta sauce feels too "thick", add hot pasta water until sauce is to a consistency you like.
-Top with chopped cilantro.
-Makes one serving.
