1/4 cup whole wheat pasta (I like smaller pasta like fusili)
4 ounces of chicken breast
1/4 cup cottage cheese, 1%
3 tbsp parmesan Cheese, grated
Garlic - use as much as you'd like
Parsley - use as much as you'd like
1 tbsp Sun dried tomatoes
Oil and Vinagear salad dressing
In large skillet, saute chicken in olive oil. Remove from pan once cooked, cut into bite size pieces.
Add garlic to skillet and saute gently. Add spinach to skillet and allow to wilt with heat. Add cut chicken and cooked pasta into skillet. Add dressing and parsley to flavour.
On plate, add 1/4 cup cottage cheese and 3 tbsp of parmesan cheese - serve skillet contents over
cheeses and mix well.
