Black Bean Hummus & "chips"
Submitted by: KB8588Introduction
This simplistic take on hummus has ample fiber, low-fat (all of which is the healthy kind), and fantastic flavor. The "chips" made from whole-wheat tortillas add even more fiber, and have a beautiful crunch. Ingredients
-
1 can black beans (drained - save juice)
1 large clove garlic (peeled)
1 tbsp extra-virgin olive oil
4 whole-wheat tortillas (soft taco size)
Spices (add to taste):
*chili powder
*paprika
*salt (I prefer kosher)
*cayenne pepper
Directions
In a food processor, blend black beans, garlic, olive oil, and spices (about a teaspoon of each, or more, if desired).
Another delicious add-in is about half a jar of roasted red peppers.
For the chips:
Lightly spray tortillas with cooking spray.
Place on baking sheet, bake at 350 for about five minutes, or until desired crispness is reached.
Break into pieces, and serve with hummus.
