Italian-Inspired Zero-Points Soup

Introduction

Ingredients

    2 cups escarole, chopped
    2 cloves garlic, minced
    2 cups baby spinach
    2 small zucchini, cubed or sliced
    1 medium red pepper, chopped
    2 cups of fennel bulb, thinly sliced
    6 cups vegetable broth
    28 oz canned diced tomatoes, (fire-roasted)
    1/4 tsp crushed red pepper flakes
    2 tsp fresh thyme or 1/2 tsp of dried
    1 tsp of fresh oregano, finely chopped or 1/4 dried
    3/4 tsp salt (I leave out)
    1/4 tsp black pepper
    1/4 cup fresh parsley, chopped

Directions

Place all ingredients in large soup pan, cover and bring to boil, reduce heat and simmer for 10 minutes
I place into 1 cup or 2 cup containers and freeze.
1 cup = 44 kcal and 2 cups equal 88 kcals
