.5 T butter or margarine (could use butter spray)
1 slice pepperjack cheese, sliced into strips
.5 cup broccoli, chopped
.5 cup mushrooms, chopped
.5 cup bell peppers, chopped
other veggies: onions, scallions, spinach, etc. would be good too
2 egg whites
1 egg yolk
cayenne pepper, salt, pepper, garlic powder, cajun spice
Toss in veggies - cook until crisp-tender, just a few minutes
Season with pepper and garlic powder (could saute fresh garlic instead)
Remove veggies from skillet - set aside
Whisk together egg whites and yolk, 1 teaspoon water, cayenne pepper, salt, pepper, cajun spice and any other seasonings
Pour egg mixture into skillet
Cook for 2 minutes
Lay 1/2 of the cheese strips on top of the egg mix
Place veggies on top of omelet and cooked until eggs are cooked through
Top with remaining cheese pieces
Slide onto plate and enjoy!
