Green Bean salad with shrimp (Jillian Michaels)

Ingredients

    2.5 tbsp red wine vinegar
    3 garlic cloves, finely chopped
    1 tbsp chopped fresh oregano leaves
    0.25 tsp salt
    0.25 tsp ground black pepper
    3 tbsp olive oil
    1 lb shrimp, shelled and deveined
    1 lb green beans, trimmed
    1 pint grape tomatoes, halved
    0.25 cup pitted kalamata olives

Directions

Whisk together vinegar, garlic, oregano, salt, and pepper in a small bowl. Whisk and stream in olive oil until incorporated. Put shrimp in small bowl and pour 1/4 cup dressing over it. Toss to coat. Cover and refrigerate 30 minutes. Reserve remaining dressing.
Prepare a bowl of ice water. Set aside. Put beans in bowl, cover, and microwave on high until bright green and crisp-tender, about 7 minutes total, checking every 3 minutes or so. Plunge in ice water, drain well.
Meanwhile, spread shrimp on rimmed baking sheet and broil, 4 inches from heat, 4 minutes, or until opaque and firm.
Mix tomatoes and olives in large bowl. Add green beans and reserved dressing, and toss. Transfer to plates and top with shrimp.
Made 4 servings (1.25 cups salad and 7-8 shrimp each)
