Introduction

Ingredients

    Frozen Yellow Sweet Corn, 2 cups
    Sliced Mushrooms, fresh, 10 oz
    Black Beans, One Can (drained and rinsed)
    3 Scallions, Chopped
    Fresh Cilantro Chopped, 4 tbsp
    Pre-Cooked Chicken Breast Chopped, 10 ounces
    Chicken Broth, 1/2 cup
    Light Sour Cream, 1 tbsp (optional)

Directions

- Place frozen corn and mushrooms in a lightly oil pan and cook until mushrooms are tender
- Pour in chicken broth
- Add in black beans, pre-cooked chicken breast, scallions, and cilantro, stir for 5 minutes.
- Dish and place sour cream on top (optional)

One Cup is a serving.
