Banana Crumb Muffins

Ingredients

MUFFINS:
Whole Wheat Flour, 1.5 cup
Baking Soda, 1 tsp
Baking Powder, 1 tsp
Banana, 2 medium mashed
Splenda, 0.75 cup
Egg white, 0.25 cup
Light butter melted, 0.34 cup
TOPPING:
Splenda Brown Sugar Blend, 0.34 cup
Whole Wheat Flour, 2 Tbsp
Cinnamon, ground, 0.125 tsp
Light Butter, 1 tbsp
Directions
Preheat oven to 375 degrees F. Lightly spray muffin pan or line with papaer cups. In a large bowl mix together, 1.5 cups flour, baking soda and baking powder. In another bowl, beat together bananas, splanda, egg whites and melted butter. Stir the banana mixture into the flour mixture just until mixed. Spoon batter into prepared cups.
In a small bowl mix together splenda brown sugar blend, 2 tbsp flour, and cinnamon. Cut in 1 tbsp butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18-20 minutes, until a toothpick inserted into center of a muffin comes out clean.
