Meatless Green Bean Salad

Ingredients

    1.5 tbsp red wine vinegar
    1.5 tsp minced garlic
    0.5 tbsp chopped fresh oregano leaves
    0.125 tsp salt
    0.25 tsp ground black pepper
    31.5 tbsp olive oil
    1 lb green beans, trimmed
    1 pint grape tomatoes, halved
    0.25 cup pitted kalamata olives



Directions

Directions
Whisk together vinegar, garlic, oregano, salt, and pepper in a small bowl. Whisk and stream in olive oil until incorporated. Cover and refrigerate about 30 minutes to blend flavors.
Prepare a bowl of ice water. Set aside. Put beans in bowl, cover, and microwave on high until bright green and crisp-tender, about 7 minutes total, checking every 3 minutes or so. Plunge in ice water, drain well.
Mix tomatoes and olives in large bowl. Add green beans and reserved dressing, and toss.
Makes about 11 servings (1/2 cup each)
