1 box silken tofu, firm
bag of snap peas
lemon juice
rosemary and dill
salt and pepper to taste
Directions
destring and blanch snap peas for 1 minute
in a food processor, combine tofu, lemon juice, and herbs.
combine tofu mixture with peas in a serving bowl and mix well. add salt and pepper to taste. let sit in the fridge for a couple hours to allow the flavors to combine.
