Easy Veggie Omelet

Introduction

I made this with whole eggs but of course you could substitute eggbeaters, egg whites, or use a combination of egg and egg whites. (Aprox 2 egg whites for each egg you replace) I made this with whole eggs but of course you could substitute eggbeaters, egg whites, or use a combination of egg and egg whites. Number of Servings: 1

Ingredients

    2 eggs, scrambled
    1/4 cup diced onion
    1/4 cup diced bell pepper
    1 slice mild cheddar cheese

Directions

Spray frying pan lightly with nonstick oil over medium heat. Sauté onions and green peppers until lightly browned and beginning to soften. This should only take a couple of minutes if the pieces are diced small enough. Transfer onions and peppers to a bowl.

Respray pan with nonstick spray over medium heat and add egg to pan, turning to coat bottom of pan. When eggs begin to set sprinkle onions and peppers over them. Top with slice of cheese (if your pan is large you may want to break slice in half and lay it end to end on one side of omelet).

Fold half of omelet over cheese and cook for a few more seconds until cheese melts and eggs are cooked through.

Plate and serve! Enjoy!
