Zucchini Ribbons (full recipe serves 2)

Introduction

Yummy side dish for BBQ Chicken and so easy to make. Yummy side dish for BBQ Chicken and so easy to make.
Number of Servings: 2

Ingredients

    1 large green zucchini (courgette)
    1 large ripe tomato, diced
    1 clove garlic, minced
    1 tsp olive oil
    Salt & Pepper
    Pinch cayenne (optional)

Directions

Makes 2 good sized veggie portions. Use a potato peeler to cut strips of zucchini (I leave the peel on for more colour). In a large saucepan (with lid), heat oil and add garlic. Then add zucchini and tomato. Stir and cook, covered for about 5 minutes. Season to taste.

  • I had no salt canned tomatoes on hand so I chopped a few of them up and added to the pan instead of fresh. Added some garlic and herb feta before serving! Hubby LOVED it and he doesnt like zucchini! - 2/22/11
