Introduction

Number of Servings: 8

Ingredients

    4 tbsp. oil
    2 med. onions, finely chopped
    3-4 med. potatoes, cubed
    1 small cauliflower, cubed
    ½ tsp. turmeric
    1/3 tsp. chili powder (cayenne)
    1 tsp. ground cumin
    2 tomatoes, chopped
    1 tsp. salt
    ¼ tsp. sugar
    200 g. peas
    ½ tsp. garam masala

Directions

Heat oil over medium heat. Fry onions and sugar until brown. Add spices and salt, cook until fragrant. (approximately 1 min.) Add potatoes, cauliflower & tomatoes stirring often 20-25 minutes to prevent accumulation of liquid. Add peas and heat through. Sprinkle masala in just before serving.

  • From Indian Vegetarian Cooking by Sumana Ray? This is one of our favorite recipes. I tweaked it a bit to make it lower calorie and also added it to the site. Mine serves 6 and is only 150 calories, yet is just as delicious. Less potatoes, more cauliflower, and less oil. - 4/10/08
