Hawaiian Turkey Burgers

Introduction

The original recipe was taken from Taste of Home; however, I changed it up a little bit to lower the calories. I found that the bread was the key issue so the nutritional information is calculated for a single patty, no bread. Use whatever bread you like and just make sure you add it on to your calorie count. Ingredients

    This recipe uses a George Forman grill or a regular grill. If you use oil to fry in a pan, make sure you adjust the nutritional information accordingly.

    NOTE: Read t as teaspoon, T as tablespoon

    40 oz package Jenny-O ground turkey
    20 oz can crushed pineapple in unsweetened juice
    1/4 c reduced sodium soy sauce (La Choy Lite)
    2 T ketchup
    2 T minced garlic
    1 T white vinegar
    1 t black pepper
    1/4 t salt
    1/4 t red pepper flakes
    6 slices turkey bacon

Directions

Dice the turkey bacon into small pieces. Cook in a skillet until done. Set aside in a small bowl.

Separate the pineapple and pineapple juice from the can.

In a large bowl, mix 3/4 cup of crushed pineapple, salt, pepper, and ground turkey. The leftover pineapple will not be used in this recipe.

In a smaller bowl, mix the pineapple juice, soy sauce, ketchup, red pepper flakes, and vinegar together.

Pat out the meat mixture into 24 equal sized patties. The patties will be approximately 1/4" thick and 2 inches in diameter.

Lay the patties out on an edged baking sheet in a single layer. You will probably need two pans.

Pour an equal amount of the pineapple juice mixture over each pan. Cover and refrigerate for at least one hour, turning the patties over after 30 minutes.

Cook on the George Forman for approximately 2 minutes or until the meat is cooked. Do not overcook because ground turkey can dry out very quickly.

Once cooked, move to a platter and sprinkle with the cooked bacon.

I calculated each patty as a single serving so you know how much they are individually and it's easy to add in whatever bread you are choosing to use.

If you use a whole wheat hotdog bun cut into 3rds, then each patty will be just over 120 calories.

1 serving = 1 patty

NOTE: Because not all of the pineapple is used and much of the marinate will drip from the meat while cooking, the nutritional information is probably over-estimating the calories. I'd rather be a little over than a little under.

    I love a good beef hamburger with teriyaki sauce and roasted pineapple on top but hate all the extra fat, so these were a no brainer to try. I used teriyaki sauce instead of soy sauce and omitted the bacon. Instead I topped each burger with a small slice of cheese and a little extra pineapple. Yum! - 7/8/12

    A big hit with the family! They are not always thrilled w/ the diet food I present them w/, but they loved this....my picky 12-yr old ate five! We put them on slider buns and added a small square of 2% cheese. Served w/ rice, asparagus and tropical fruit. Will definitely make this again! - 3/7/11
