Beef Fried Rice

Introduction

This is a dish I grew up with. Mom made it with leftover pork roast. I like beef, and others have made it using chicken. It's a one-pot meal that can be changed to accommodate your family's taste. This is a dish I grew up with. Mom made it with leftover pork roast. I like beef, and others have made it using chicken. It's a one-pot meal that can be changed to accommodate your family's taste.
Number of Servings: 8

Ingredients

    2 cups of brown rice
    1 Tbsp. olive oil
    1 Tbsp. butter
    5 1/2 cups water
    1 1/2 cups shredded roast beef, all visible fat removed
    2 cups chopped celery
    1 1/2 cups chopped onion
    4 boullion cubes (to taste)
    2 Tbsp. Worchestershire sauce
    1 tsp. black pepper

Directions

Place the olive oil and butter in a dutch oven. Melt butter. Add raw rice and saute the rice until it is a golden brown, stirring often. Let cool slightly. Add water, boullion cubes, worchestershire sauce, celery, onion and beef. Bring water to a boil, turn heat down to simmer, cover pan, and cook for 45 minutes or until the water is absorbed in the rice.
Makes 8 servings of approx. 1 1/4 cup each.
