Avocado Quinoa Salad

Introduction

Quinoa salad with avocado and veggies I adapted from a recipe from chileanavocados.org.

Nutrition data is for my adapted recipe. Each serving is 1 cup.
Quinoa salad with avocado and veggies I adapted from a recipe from chileanavocados.org.

Number of Servings: 4

Ingredients

    1 cup quinoa
    2 cups chicken broth (can use veggie broth)
    1 avocado (the site used two but I like it less avocado-y)
    2 tbsp lemon juice
    1 tomato, diced
    1 cucumber diced
    1 celery stalk diced
    1/4 green bell pepper diced
    salt, pepper, chili powder, onion powder, garlic powder to taste

Directions

Boil broth add quinoa and cook on med-low heat until the liquid is absorbed. Set aside to cool.

Cut avocado into bite sized pieces then toss with lemon juice. Add quinoa and all other ingredients. Toss gently to mix. Chill until ready to serve.
