IntroductionThis was tweaked from the tofu kale loaf recipe. This was tweaked from the tofu kale loaf recipe.
1t olive oil
14 oz. extra firm tofu
1T dijon mustard
1T almond butter
1/2 cup carrots grated
1/2 cup zuchini grated
oil a bread pan with olive oil. Crumble tofu, and mix with other ingredients. Fell free to use peanut butter, or whatever nut/seed butter you may have. Mix all ingredients together, but it is easier to mix the nut butter into everything if you blend it into the other condiments before adding it to the tofu and veggies.
Press into pan. Bake for 55-60 min.
