Amaretto Vanilla French Toast with Strawberries

Introduction

A yummy breakfast treat that seems way more decadent than it really is! I like the consistency of Italian bread, but you can substitute any bread to increase fiber or decrease calories. A yummy breakfast treat that seems way more decadent than it really is! I like the consistency of Italian bread, but you can substitute any bread to increase fiber or decrease calories.
Number of Servings: 2

Ingredients

    6 medium slices of Italian (Scali) bread
    1/4 cup nonfat milk
    1 fl oz Amaretto liqueur
    1 tbsp pure vanilla extract
    2 large eggs, beaten
    4 extra large strawberries, sliced
    Cooking spray as needed

Directions

Combine beaten eggs, milk, Amaretto and vanilla and whisk until well blended. Dip bread slice into mixture until well coated and let excess drip off.

Place slices into a cooking pan heated on medium heat and coated with cooking spray. Cook on one side until egg mixture is no longer wet and flip onto other side.

Serve warm and top with sliced strawberries. Also nice topped with a bit of whipped cream, sugar-free syrup, or agave nectar.

  • I bet you could make this with almond extract and get almost the same taste. That would lower the calories too. I'll have to try it both ways. - 6/28/10
