Squash and tomato bisque

Ingredients

    3 to 4 tablespoons butter or vegetable oil
    1 large onion, chopped
    3 to 4 cups chicken or vegetable stock
    28 ounce can whole tomatoes
    1 tablespoon maple syrup
    4 cups pureed pumpkin or butternut squash
    salt to taste
    pureed roasted red pepper for garnish

Directions

Melt the butter and saute the onion slowly until limp but not brown. Stir in the 3 cups of stock and let simmer about 15 minutes Puree the tomatoes and maple syrup and pumpkin in a blender or food processor. Strain the onions from the stock and add to the food processor. Put the whole thing back into the pot, season with salt, and serve very hot.
