Shrimp Stir Fried Rice

Introduction

Great as a main dish or a smaller serving as a side dish. Great as a main dish or a smaller serving as a side dish.
Number of Servings: 4

Ingredients

    1 cup regular egg substitute
    2 tsp soybean & canola oil blend
    3 med. scallions, chopped (optional)
    1 cup frozen peas and carrots, thawed
    4 oz frozen salad-size shrimp, thawed under cold water
    2 cups quick cooking brown rice, cooked
    4 tbsp low-sodium soy sauce

Directions

Coat a large wok or skillet with cooking spray and heat until an added drop of water sizzles.
Scrambe egg substitute in wok. Remove when cooked and set aside.
Add oil, scallions, peas, carrots and shrimp to wok. Stir fry for 5 minutes.
Add cooked rice, eggs and soy sauce. Stir-fry for about three minutes.
Yields about 1 1/2 cups per person.

    Loved this! I also added crushed red pepper and some regular onion to the ingredients. I didn't have soybean oil so I used peanut oil and the result was awesome! Definitely will be making this again! - 8/26/10

    This was a big hit at our house, hardly any seconds... and we doubled the recipe! We used a little regular onion and garlic.. also, used a mix of peas and corn. We used real eggs, not the substitute. Didn't have soybean oil, used peanut oil and canola. AMAZING result!!! Will make again! - 7/11/12

    I used sesame oil intead of the soybean and added garlic, fresh ginger and a sprinkle of sesame seeds....yum! - 12/14/08

    Made it and used the 'less sodium' soy sauce... The next time I switched to teriyaki sauce--and liked it better. My family loves it and we've made this for years!!! It's quick and so easy, my daughter can get it started . Hubby who doesn't like anything, loved it. - 1/16/08

  • Really good, didn't find it quite the flavor I wanted so I added some garlic, red crushed pepper and then some bean sprouts and water chestnuts to beef it up without adding too many calories. Great base recipe to make it whatever you want. - 9/25/12

  • It was good and super easy to make. I used a combo of peanut oil and canola. I also added some ginger to it and its still a bit bland for my taste. I'm not big on the peas and I think omit them the next time. But this is a good starter to add to your taste. - 10/31/11

    I didn't have soy so I made this with low sodium worcestershire. Not exactly the same flavor but it was good. I used boil-in-bag brown rice, which turned out kind of mushy. - 6/6/10

    I use brown rice but in the shrimp I use popcorn shrimp in the 4 oz. bag ready to cook I put in water use tomatoes 1 12 oz. can, green beans, the french cut, 2 celery stalks cut up in 1/2 inch sections, bunch of scallions or green onions,1 tsp. salt. 1/2 tsp. pepper and I pour over the cooked rice. - 1/15/08
