Adobo Chicken Crock Pot Recipe

Introduction

Easy and simple to prepare. Plus it is lowfat. The original recipe was found on Crock Pot Recipes. Since I cook for 1, I substituted 1 whole chicken for 3 skinless thighs and added red bell pepper. Number of Servings: 3

Ingredients

    1 small sweet onion, sliced
    8 cloves crushed garlic
    1 cup diced red bell pepper
    3/4 cup lite soy sauce
    1/2 cup vinegar
    3 skinless chicken thighs

Directions

In a small bowl combine the onion, red bell pepper, garlic, soy sauce and vinegar and mix all together.

Place chicken in crockpot and pour mixture over chicken. Cook on low for 6 to 8 hours.

Optional: Serve over Jasmine Rice.

    Combined this recipe and the one by WILLWORKFORFOOD.
    Used apple cider vinegar and to save time .5 cup frozen chopped onions
    There's flexibility to add more chicken if you have a bigger family. I poured some of the left over sauce on my rice, but use sparingly or the rice may get salty - 7/9/11
