Sweet Potato Salad

Ingredients

    2 pounds sweet potatoes, peeled & cut into 1 inch cubes
    vegetable cooking spray
    3/4 tsp salt, divided
    2 celery ribs, diced
    1 jalapeno pepper, seeded & finely chopped
    1/2 cup diced onion
    1/3 cup diced green bell pepper
    3 tbl brown sugar
    2 tbl chopped fresh or 1 tbl dried parsley
    5 tbl white vinegar
    1 tbl vegetable oil
    1 tsp hot sauce
    1 tsp prepared mustard
    3 slices bacon, cooked & crumbled (optional & not included in nutrition information)

Directions

Arrange potatoes in an even layer on a cookie sheet. Coat with cooking spray & 1/2 tsp salt. Bake at 400 F for 25 mins or until slightly tender. Stir together remaining ingredients except for bacon. Add potatoes & toss gently. Sprinkle with crumbled bacon if desired. Serve warm or chilled.

    Hey, thanks for the comments! I really love it because it's different and delicious. It tastes better the next day. And the colors do make it appealing also.
