2 tbsp Olive Oil
1 Medium Onion (chopped small)
3 Cloves Garlic (grated)
8 oz. Baby Bella Mushrooms (pre-sliced)
1 Can Del Monte Diced Tomatoes, No Salt Added
0.5 Cup Swanson Chicken Stock, 33% Less Sodium
Salt (to taste)
Black Pepper (to taste)
Serve over Chicken, Pasta, Eggplant, or whatever else you like!
This makes about 4 servings.
(The nutrition info is based on 1 tsp each of Salt, Pepper, Parsley and Rosemary, but these can all be adjusted to taste. I just had to put in a specific amount for the tracker. The amount of Chicken Stock is also an estimate. You can add more or less depending on how much juice you want the sauce to have. I also added a dash of Garlic Powder to mine for a little extra Garlic flavor.)
