1 1/2 lb small red potatoes w/ skin left on and quartered
2 tbs soy sauce
1 tbs unsalted butter
2 cloves garlic, chopped
pepper to taste
Melt the 1 tbs butter.
Mix with the soy sauce, garlic and pepper.
Toss this mixture with the quartered red potatoes.
Place the potatoes in a single layer on a foil lined baking sheet.
Bake for about 30 minutes (longer if not convection) until the potatoes are tender and the sauce is absorbed some - Stir the potatoes about every 10 minutes to ensure even coverage of the sauce.
Makes 6 servings.
