I made this recipe up on a night when I had very few calories left to spend on dinner. Lo-cal, nutritious and pretty filling for 229 calories, with less than 5 grams of fat and loaded with potassium. Ingredients

    One large russet potato, skin on, scrubbed
    1 C chopped cooked broccoli (if fresh, microwave 1.5 minutes)
    2 oz. (scant 1/3 C) fat-free plain Greek yogurt
    1 oz. (generous TB blue cheese crumbled)
    1/4 tsp. Mrs. Dash original seasoning
    dash paprika

Directions

Preheat oven or toaster oven to 350 degrees. Prick potato skin with a fork and microwave 5 to 8 minutes, wrap in kitchen towel and allow to sit. In a mixing bowl, combine broccoli, Greek yogurt, blue cheese and Mr.s Dash. Cut potato in half and scoop insides into the bowl and mix well. Stuff both potato halves, dust with some paprika, and reheat in the oven for 8-10 minutes.
