Ingredients

    1 1/2 C chopped Green bell pepper
    1/4 C vegetable broth
    1 Can fat-free vegetarian refried beans
    2 C cooked brown rice (instant is ok)
    1 head romaine lettuce, shredded
    1 C grated nonfat Cheddar cheese
    2 C chopped fresh tomatoes
    1 C thinly sliced green onions
    Pickled jalapeno rings to taste
    Baked bite size tortilla chips

Directions

Cook pepper in broth 5 minutes. Heat beans in micro.
Cook rice if not already cooked. Assemble on individual plates.
Spread hot beans, top with rice, then green pepper, lettuce, cheese, tomato, green onion, and jalapeno rings. Serve immediately with the tortilla chips for dipping and eating.
