Red Cabbage with Currants

Number of Servings: 4

Ingredients

    1 tbsp. cumin seeds

    1 oz. dry red wine

    1 red onion, thinly sliced

    ¼ tsp. salt

    1 small red cabbage, thinly sliced
     
    150 g redcurrants

    2 tbsp. vinegar

    180 ml water

Directions

Toast cumin seeds in a frying pan, about 1 minute.

In a large pot, heat wine. Add onion and salt, and sauté for 5 minutes.

Add red cabbage and sauté over low heat, about 5 minutes.

Add some water to prevent sticking.

Add cumin seeds and red currants.

In a bowl mix vinegar and water and pour over the cabbage and mix well.

Preheat oven to 150°C.

Lightly oil a baking dish and spoon the cabbage and liquid into it. Cover and bake for 45-60 minutes.
