**Under Beef Daube Creole in cook book

Followed a different recipe than the book, but the concept is the same

Number of Servings: 8

Ingredients

    2 lb Chuck Roast
    1 medium yellow onion
    2 cloves garlic
    1 large can crushed tomatoes
    1 small can tomato paste
    italian seasonings
    1 tsp sugar
    1/4 cup red wine

    ronzoni smart taste spaghetti pasta

Directions

1. Place seasoned chuck roast (salt and pepper) into a cast iron skillet....brown in 400 degree oven for 25 min...flip...brown for another 20 minutes
2. Take cast iron out of oven and place roast on cutting board
3. build basic tomato sauce in cast iron-onion, garlic, tomatoes, tomato paste, italian seasonings, 1 tsp sugar-simmer for 5-10 min
4. Stir in red wine and roll the roast around in sauce to evenly coat meat....place roast back in with the sauce and cover
5. Put covered cast iron back into oven at 300 degrees for 3 hours
6. Serve over cooked pasta and top with optional parmesan cheese
