2 medium onions chopped to your liking
2 medium green peppers chopped (abt 2 cups)
1 large head cabbage chopped to your liking
2 28 oz cans whole tomatoes broken up with juice
1 cup regular coffee (left from earlier in the day)
2 Tablespoons Light Soy sauce (optional)
Italian seasoning or basil or oregano to your taste
Add the soy sauce.
Add juice from the tomatoes and coffee.
Let it come to a boil.
Add cabbage. When it comes to a boil lower heat and let simmer 15 minutes or until crisp tender.
This is a good chunky soup that fills my need for hot & crunchy.
makes 12 1 cup servings.
