1/2 cup old fashioned oatmeal, uncooked
1/2 cup canned pumpkin
1 cup nonfat milk
Pinch of ground cardamom
1/4 tsp pumpkin pie spice
1 tbsp sugar
Directions
Mix all ingredients.
Cook over low heat for 20 minutes, or until thick.

I've been making this for ages in the microwave, but I use Splenda, pumpkin pie spice, & a dash of salt. For the leftover pumpkin, measure 1/2 cup portions, then place on a baking sheet lined with parchment paper. Put in freezer, when frozen, place in freezer bag, & it's ready when you want it. - 6/17/08

This was SO GOOD. I changed it a little--you do use the 1/2 C. oatmeal and milk, but I added 1/4C of canned pumpkin, and used 1/4 t. cinnamon, 1/8t. nutmeg (ground), and 1/8 t. ground cloves, and splenda instead of sugar. The recipe actually makes just 1 serving, according to the oatmeal package. - 4/9/09

I have found that using 'pumpkin butter' is easier and it is already spiced...just look for ones with minimal or no sugar...I use it when I make pumpkin pecan pancakes too and the consistency is much smoother and you can pop the leftover 'butter' in the fridge and use on muffins, etc later on. - 3/12/09

This was very good....but I have since I am always prepping for one and I don't like the taste of reheated oatmeal, I have started using 1/2 cup of oatmeal, add 1 tbsp of dry milk, 1/2 tsp of pumpkin pie spice, 1-2 tsp splenda and 1-2 tbsp raisins and mixing it together and then adding boiling water - 11/24/10

I really liked the idea behind this, but I found it a little bland, for lack of a better word. There was plenty of pumpkin flavor, but little else. I'll have to play around with the ingredients a bit. It was very filling, though, and it grew on me a little more with each bite. Will make it again. - 7/10/12

Made double portion for a warm single supper and save the other half for tomorrow, maybe breakfast. Used Splenda. Used cinamon instead of unavailable cardomom, 1% milk and a Tbsp ground flaxseed. So delicious and really nutricious. A low 8 points Weight Watcher meal, and got in a milk serving! - 2/8/11

I'm not a fan of pumpkin pie - love the flavor, but not the texture. I tried this because I thought it would be a good substitute and it is AMAZING! It gives me that pumpkin pie flavor I love, but such a smooth, creamy texture. I made mine with almond milk instead of skim & its very creamy. - 2/25/10
