1/2 cup panko, toasted 3 tbsp light mayonnaise 1 tsp lemon juice 1 tsp lemon zest 2 tsp water salt and pepper 2 lbs cod or other firm white fish, cut into 1x3" sticks
Preheat oven to 425 degrees. In a wide bowl, whisk together the mayonnaise, lemon juice, water, lemon zest, salt and pepper. In another wide bowl place toasted panko. Dredge the fish first in the mayonnaise mixture, the in the panko to coat. Place on a rack nestled in a roasting pan. Bake until fish is cooked through and panko coating is brown, about 22-25 minutes.
