American Chop Suey (Cook's Illustrated)

Introduction

Number of Servings: 4

Ingredients

    Olive Oil, 2 tbsp
    Ground Beef 93% Lean, 16 oz
    Green Peppers (bell peppers), 1 cup, chopped
    Celery, raw, 1 stalk, large (11"-12" long), chopped
    Garlic, 2 cloves
    Del Monte Petite Cut Diced Tomatoes, 14.5 oz can
    Tomato Sauce, 15 oz can
    Kitchen Basics chicken stock 1.5 cups
    Macaroni, enriched, 2 cup elbow shaped

Directions

Brown ground beef in 1 T of oil. Set aside.
Saute vegetables in remaining T of oil, 4 min. Add garlic, saute 30 sec. Stir in remaining ingredients and beef. Simmer 10-15 minutes until macaroni is ready, stirring frequently.
