    * Carrots, raw, 2 cup, chopped
    * Onions, raw, 1 medium (2-1/2" dia)
    * Peas, frozen, 2 cup
    * Flour, white, .25 cup
    * Sweet Corn, Fresh, 2 ear, large (7-3/4" to 9" long)
    * Peppers, sweet, red, raw, sliced, 1.5 cup
    * *Morningstar Farms- Meal starter crumble, 340 gram(s)
    * *Central Market Vegetarian Vegetable Broth, 4 cup
    * *Potato, raw, 12 cup diced
    * Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, 8 serving
    * Milk, nonfat, 1 cup
    # Olive Oil, 1 tbsp

Directions

Chop carrots, onion, bell pepper, and celery. Saute vegetables in olive oil until cooked through. Add Morningstar Crumbles. Cook until heated through. . Add thyme, cumin, and paprika to taste. Add up to 4 cup veg broth, along with corn and peas and cook down. After simmering for several minutes, add spices. In the meantime, boil and cook potatoes in a large pot of water. Once soft, drain and mash potatoes with Smart Balance and skim milk. Place vegetable mixture in large casserole pan and cover with mashed potatoes. Broil on high for 10 minutes or until potatoes have formed a nice crust. Makes 6 heaping servings or 8 smaller servings.
