Stroganoff Burgers with Zucchini

Introduction

This is an adapted recipe from Rachel Ray. I didn't have two pounds of ground beef, but I had a lot of zucchini. Borrowing the idea from the American Heart Association's meat loaf made with zucchini and ground beef, I came up with this. This is an adapted recipe from Rachel Ray. Ingredients

    Patties:
    Lean ground beef
    two cups grated zucchini
    quarter cup beef stock
    fresh ground pepper
    salt
    quarter cup parsley
    quarter cup dill
    quarter cup chives
    Sauce:
    2 tbls extra virgin olive oil
    3 tablespoons county crock
    1 cup fresh white mushrooms, sliced
    1/3 cup shopped onion
    2 cups beef stock
    2 tblspn garlic salt or 1 garlic clove chopped
    2 tablespoons flour
    1./2 cup dry white wine
    1/2 cup sour cream
    four slices thick bread


Directions

Grate zucchini and mix with ground beef and beef stock. Let sit for half an hour, then mix in herbs.
Meanwhile, saute mushrooms in olive oil and butter. Then add onions after 10 minutes and saute them for 8 to 10 minutes. Sift in flour, stir for a minute, then stir in wine and stock. Bring to bubble, let stand for a minute, remove from heat and stir in sour cream.
Prepare burgers by dividing mix in four, then grilling or cooking in frying pan for 45 mins, med or 1 hour for well done. Flip once.
Toast bread and use spread on them, top with burger and pour sauce over top
