Quick and easy...packing an incredible amount of vitamin A and potassium.

These potato pancakes offer just a little sweetness and are a great side for lean meats at dinner. Or serve as an alternative to hash browns at breakfast.
Quick and easy...packing an incredible amount of vitamin A and potassium.

These potato pancakes offer just a little sweetness and are a great side for lean meats at dinner. Or serve as an alternative to hash browns at breakfast.

Number of Servings: 3

Ingredients

    1 medium sweet potato, grated
    3 Tbsp chopped onion
    2 eggs
    1/4 cup milk
    2 Tbsp flour
    1/2 tsp pepper
    1/2 tsp cinnamon

Directions

Peel and grate the sweet potato. Set aside in a sieve to drain while you prep the rest of the ingredients.

Whisk eggs and milk together until well blended. Add flour, cinnamon and pepper. Add salt to taste.

Stir in sweet potato, and onion.

Heat a skillet over medium heat. Spoon approximately 1/3 cup of the mixture into the skillet. Cook each side 7-10 minutes until golden brown, flipping once.

Makes 6 pancakes. One serving=two cakes
