Zuppa Toscana

Introduction

Lighter version of the classic Olive Garden Soup. Lighter version of the classic Olive Garden Soup.
Number of Servings: 8

Ingredients

    6 cups chicken broth
    5 med. potatoes, sliced
    3 Jenni-O hot italian turkey sausage links
    1/2 C minced onion
    2 T Hormel bacon bits
    2 T minced garlic (or to taste)
    8 oz cream cheese (fat free or 1/3 less fat)
    1 cup fresh kale, torn into small pieces
    fresh ground pepper (add to taste)

Directions

Bring chicken stock to a boil in a large pot. Place sliced potatoes in the pot to cook. Heat a large skillet. Remove the casing from the turkey sausage and grind the meat up. Cook the onions and the turkey sausage on the skillet until done. Add to the soup pot. Add bacon bits and garlic as desired. Cook until potatoes are tender. 10 minutes before serving, stir the cream cheese into the soup until melted and blended. Add the fresh kale and ground pepper. It's ready to serve!
