4tbsp margarine (or any butter substitute), softened
¼ cup applesauce
2 tbsp skim milk or water
¾ cup packed light brown sugar
3-4 mashed bananas
1 ¾ cup whole wheat floer
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1. Beat margarine, applesauce, eggs, milk, and brown sugar in large bowl until smooth. Add banana and blend at low speed then increase to high speed for 1 to 2 minutes.
2. Combine flour, baking powder, baking soda, and salt; mix into batter a little at a time until fully blended. Stir in nuts.
3. Pour into greased loaf pan and bake at 350º F about an hour until bread is golden and toothpick inserted in center comes out clean. Let it cool in the pan for about 10min before removing from pan to cool to room temperature.
