Yumm Bowl

Introduction

A bowl of rice and vegetables topped with a sauce. Chicken can be added or omitted for vegetarians. A bowl of rice and vegetables topped with a sauce. Chicken can be added or omitted for vegetarians.

Ingredients

    2 cups rice
    1 can low sodium black beans
    1 cup cherry tomatoes
    4 green onions
    1 red pepper
    2 avocados
    2 chicken breast halves
    seasoning packet (like fajita or SW Seasoning)
    Hidden Valley Fat Free Ranch Dressing

Directions

Cook rice. Pound chicken to flatten and pour seasoning packet on both sides. Place chicken in an oven proof pan and bake at 350 for 30 to 40 minutes. Allow chicken to rest 5 minutes before cutting into small bite size pieces. Cut vegetables and chicken and assemble in a bowl. add 2 Tbsp. sauce
