Barley & chicken rositto

Number of Servings: 6

Ingredients

    1 cup barley
    1 cup diced celery
    1 cup diced carrots
    1 cup diced onions
    1 small red pepper diced
    1 cup fresh mushrooms diced
    2 cloves of garlic diced
    3 cups chicken stock ( reduced sodium)
    2 cooked chicken breasts diced
    1 tsp dried rosemary
    1/2 tsp dried basil
    1/2 tsp white pepper
    1 tbsp dried parlsey
    1/2 tsp thyme
    1 tbsp oil


Directions

cook chicken breasts, allow to cool & dice.
While chicken is cooking, prepare other ingredients.
Heat a large skillet over medium heat with a tbsp of oil. Add garlic, onion, celery & carrots. Sautee for 2-3 minutes. Add barley and chicken stock. Mushrooms & spices. Add chicken. Allow to simmer for 5-10 minutes then cover and reduce heat to med-low for 20-30 minutes.
Makes 6 good size servings.
